Family Fondue Fantasy- OK, so..., maybe you haven't had fondue in a while, but I'm not talking about a typical fondue experience! This is not melted cheese served with bread and fruit (although that's great too!) But, this is a meal,or..., more appropriately...SPREAD. And if you decide to go for it, please make sure that you have set aside plenty of free time so that you will get the most out of this experience! Here's an opportunity for real fun where you can indulge and take your time doing it! Wonderful for intimate, bonding time, over a spread of freshly prepared meats and vegetables, cheese, bread and wine (or whatever your beverage preference is.) I, however, would probably recommend a good German wine such as a nice Riesling Spatlase. It complements the food choices and goes especially well with the baked brie and fruit. NOTE: If you do not own a Fondue Pot (or two), I highly recommend that you pick yours up now! Here is the typical spread, but it can be altered to meet your needs; filet mignon, chicken breast, cut onions, portabella mushrooms, yellow squash, zucchini, baked brie in pastry, and sliced granny apples.
Chimichangas with Rice and Beans- Our chimis are stuffed with shredded beef or white meat chicken. Each are first slow roasted, trimmed of excess fat, shredded, then folded into our special chimi filling. Together they are allowed to simmer until all of these marvelous flavors have blended and the meat just melts in your mouth! The chimmis are then stuffed, cheeses added and then folded and lightly fried in EVOO then placed into the oven. Using some of the left over broth, the rice is cooked fresh and bursting with flavor. It is then layed on top of the refried bean and sprinkled with a generous portion of mexican cheeses and jalapeno peppers. The dish is then baked to a cheesy, golden sensation! Sides include but are not limited to; salsa, sour cream, jalapeno peppers, shredded colby jack cheese, shredded lettuce, chopped tomato, chopped onion, and anything else we can think of! Chicken Fajitas - Fresh, boneless, skinless, chicken breast is pan fried in EVOO and mexican seasonings. Green, red bell, and yellow peppers are added with sliced red onion. Served with warm tortillas, shredded cheddar or colby jack cheese, lettuce, tomato, sour cream, mexican beans and rice. Beef Enchiladas - Flour tortillas are lightly fried in EVOO then dredged in enchilada sauce. They are filled with a delicious blend of seasoned lean ground pork, beef and onion. Then they are topped with mexican cheese, rolled, and topped again with more of the enchilada sauce. They are baked in the oven and garnished with shredded cheese, lettuce, tomato and sour cream. Served with rice and beans. Chicken Enchiladas We start first by cooking the fresh bird. While that is simmering in a pot with Mexican seasonings and creating it's natural broth, cheeses are shredded, onion and garlic chopped and the sauce is started. The chicken is deboned, shredded and mixed with seasonings. Tortillas are lightly fried and enchiladas are assembled and served stacked to perfection with the chicken mixture, sauce and cheeses. Topped with shredded lettuce, sourcream, chopped tomato. Served with Spanish rice and refried beans. Kilbassi & Sauerkraut Kilbassi is lightly sautéed in EVOO, onion and a pinch of fresh smashed garlic. Small red potatoes, seasonings and chicken broth are added and their flavors are allowed to come to life. The sauerkraut is then added and the pot just gets happy! Served with Rye bread or rolls. Chili- Ohhh, made from scratch, our chili may just be award worthy! You be the judge...., lots of fresh ground sirloin, ground lean pork, and red chili beans, in a tomato based sauce. Onion, garlic, red pepper, chili pepper, habanera pepper, and tomatoes, are sauteed in EVOO, along with seasonings and herbs. The ground meat is added to the pot with a small amount of alcohol (which cooks out) along with the beans and sauce. It's really not as hot as it sounds though. We take special care and would never abuse the use of the habanera and chili peppers! Even WE have limits! The chili is served with warm, soft tortillas as well as lightly fried tortillas. Sides would include; Sour cream, shredded colby jack cheese, lettuce, tomato, and maybe some hotsauce just in case. Big Beef MexiBurgerPure Ground Beef Sirloin is blended with Mexican seasonings, formed into large beef patties and grilled or pan fried. This mouth watering sensation is then topped with layers of peppers and Mexican cheeses. They are sandwiched between two warm tortillas and topped with salsa, shredded lettuce, chopped tomato and sour cream. Use Your Fork!
